Several of us here at Interior Inspirations have had the privilege of sitting under the Godly teaching and wise counsel of this dear lady, Miss Nan. Some of us have made mention of her in our posts. She has made such an impact on my life, she is my mentor. She has written many books and is working on another one right now. They are all full of God’s Truths and written in such a practical way.

Everyone should have a copy of Miss Nan’s cookbook. It has helped Lisa Rippy and I on several occasions! I think Ashley and Rhonda can say same the same as well. 🙂

Since Interior Inspirations challenges us to be Godly women and homemakers I decided to share a recipe from her cookbook for you today. It is her recipe for Chicken and Rice. Total. Comfort. Food. This is great to double and take to a new mom or sick friend. Your family will thank you too!

Miss Nan’s Chicken and Rice Casserole

3 Chicken Breasts, boiled and diced ( about 3 cups)

1 6 ounce pkg Uncle Ben’s long grain and wild rice

1 small jar sliced mushrooms, drained (optional)

1/2 tsp salt

1 can cream of mushroom soup

1/2 lb Velveeta cheese

1/2 stick of butter

Cook rice according to directions. Miss Nan doesn’t use the seasoning packet that comes with it. I have about half of the seasoning packet and it adds a little extra flavor. Mix the chicken, rice, mushrooms, salt and the soup. Melt the cheese and butter over low heat and then add to the chicken mixture. Put in a greased/sprayed 9 x 13 dish and bake at 350 for 30 minutes.

Serve this with a green salad or fruit salad, green beans and a roll and you have dinner! Enjoy!
