Brrrr! It’s cold here in Mississippi today. Is there anything better than a hot bowl of soup or chili on a cold day? I think not. For busy moms like me, I enjoy the comfort of a warm meal and the smell of homemade vegetable soup simmering on the stove with the convenience of dumping a few things in a stock pot and letting it cook while you unload the dishwasher or change over a load of clothes. You could even do this in the crockpot in the morning if you wish. Don’t forget that you can also freeze half to enjoy later!
Easy Vegetable Stew
Three bags frozen stew or country blend vegetables (can also use large cans of Veg-all)
One can corn
One can Hunt’s Traditional Tomato sauce
4-5 cans of water
Salt and pepper to taste
Generous amount of garlic salt
Tablespoon of chicken or beef bouillon seasoning
Two cups elbow macaroni
Stew meat (optional)Throw all ingredients except macaroni in a stock pot and cook on high heat. Bring to a boil, add macaroni, stir and let simmer for 30 minutes or until vegetables are soft.
And it’s really that easy. All you’re missing is the cornbread! Grab your favorite blanket and settle in this evening while you allow a little comfort food to keep you and your family nice and warm!
