Sweet Garlic Chicken
Clean and wash the chicken thighs (w/the bone), and place them open onto a buttered baking sheet.
Next, lightly dust the chicken with garlic powder and sprinkle a moderate amount of brown sugar or lightly drizzle molasses all over the chicken.
Next, slice carrots and red potatoes into small thin slices.
Place the carrots and red potatoes on top of the chicken evenly.
Bake at 375 until the chicken is cooked through (35-45 minutes)
Be sure to place the baking sheet on top of aluminum foil that is placed onto the rack of the oven before pre-heating. The juices of the chicken tend to pool in the baking sheet and incase it runs off the sides, you want it to land on the foil and not on the bottom of your oven. Be very careful taking the sheet out of the oven because it will be full of juices.
We had a delicious Kale, green apple, golden raisins, and nut salad with this as our side and it was just a perfect combination of flavors! Enjoy!
