Spice It Up Birthday Cake
Ingredients:
Cake –
Spice Cake mix
3 eggs
1 cup water
1/2 cup oil
1 small bag of mini chocolate chips
Icing –
3/4 can Cream Cheese icing
1/2 cup softened butter
2 cups powder sugar
1/3 cup sweetened condensed milk
1 cap of vanilla flavoring
1/4 cup regular milk
(adjust measurements to the consistency you want)
Pour mix into bowl then add the water.
Then add the oil.
Next add the beaten eggs.
Then using a mixer, mix it on high for 2 full minutes.
Be sure to butter (grease) and flour your pans really well.
Fill the pans evenly with batter.
The sprinkle the batter with mini chocolate chips.
Next, pop both pans in the oven side by side at 350 for 25 minutes
While the cake bakes, let’s make some icing!
Here’s what you’ll need:
In your bowl, dump your powdered sugar, butter and cream cheese icing and mix together. (Follow the measurements I posted at the top of this post:)
Then add your cap full of vanilla.
Then add your two milks. Mix it all together to the consistency you want. Then take the cakes out of the oven – should have a little rise to them.
Let the cakes cool and then, taking a knife, run it along the sides of the pan…loosing the cake from the edges. Then stack one cake on top of the other, with the chocolate chip sides TOUCHING. You want a nice thick layer of chocolate chips INSIDE the cake. After stacking them, give a gentle “push” on top of the cake to help melt the chips a little more and to join them together. But don’t OVER push. Then, take your icing and start covering the cake.
