My Little Honey Pumpkin!

Fall is all up in the air! And that always makes me want to nibble on warm breads, drink hot cocoa piled high with those adorable mini marshmallows, and bake up a big tray of sump’n pumpkin!  But as I read in a magazine just this past week, there are so many ways to enjoy the flavors of fall without indulging in too much sugar and starch. Here is one of the recipes that I can’t wait to make for my family.

Honey Pumpkin Bars

  • 1/3 cup dry, nonfat milk
  • 2 cups all-purpose flour (or GF flour)
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
  • 1/3 cup vegetable oil (or coconut oil)
  • 2/3 cup honey
  • 1/2 cup orange juice
  • 2 tbsp orange peel, grated
  • 2 eggs
  • 1 cup pumpkin, mashed
  • optional – finely chopped walnuts for topping

 

Preheat oven to 350 degrees, then lightly grease or spray a 12X15″ baking pan with sides. In a small bowl, combine dry milk, flour, soda and spices. In a large bowl, mix oil, honey, orange juice, orange peel, eggs and pumpkin. Gradually add flour mixture to pumpkin mixture, stirring until smooth. Spread batter onto prepared baking pan and bake 15 – 20 minutes until golden brown and cake springs back when lightly touched. Let it cool and then cut into 2″ squares.
