Easy Crockpot Italian Chicken

Hello there!

One of the things I’m trying to work on as a busy mom of three little ones is meal planning! Right now “meal planning” for me sometimes means just thinking about dinner before 4:00pm – anyone with me?! Some days I’m on my game and other days it’s minute-to-minute, but that’s life! And that’s okay! Lisa is great at reminding me that homemaking is all about my ATTITUDE and my HEART, even on the days when I’m doing well to make a frozen pizza!

I’ve always loved my crockpot and I always feel so on-the-ball when I make use of it. I have no idea why I don’t utilize it more! Here’s a VERY simple recipe that’s just delicious. Give it a try!


Easy Crockpot Italian Chicken

4-6 chicken breasts

1 package dry Italian dressing

1 block cream cheese

1/2 cup water

1 can cream of chicken soup

1 can cream of mushroom soup

2 cups rice (prepared)

Place chicken in crockpot and pour dressing mixed in water over the chicken. Cook on high for 3-4 hours. Microwave cream cheese, cream of chicken and cream of mushroom until you can just mix together. Pour over chicken and cook 1 more hour. Serve over rice and enjoy!
