Mmmmm this looks yummy enough and simple enough that I may go with this one! I finally found a delicious homemade cream cheese icing recipe that would be so delicious with this cake, too. – click here for Recipe

Cream Cheese Frosting

  • two 8 ounce (450g) block cream cheeses, softened room temperature (16 ounces)
  • 3/4 cup (175g) unsalted butter, softened to room temperature
  • 5 cups (600g) confectioners’ sugar
  • 1 Tablespoon milk
  • 2 teaspoons pure vanilla extract
  • 1/8 teaspoon salt, or more to taste

In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on high speed until smooth and creamy. Add confectioners’ sugar, vanilla, milk, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes. Taste. Add more salt if needed.

This carrot cake is one of 85 Spring Sweet Treats recipes that I found at CountryLiving.com.

Some of the recipes are for cakes, breads, muffins, cheesecakes, cookies and breads. So, if you are looking for something that will be so sweet and savory to serve to your Easter family and friends, or to surprise those you work with at the office, be sure to go to CountryLiving.com
