BBQ, Potatoes, Beans and a Homemade Happy – Recipe

This is one of our favorite meals, and it’s so super easy to prepare!

Take bone-in chicken thighs and wash them well under cold water.

Then place them in a casserole dish, skin side up. (If you remove the skin, just be sure to keep the same side up, bone down.)

I like to take my BBQ sauce and drizzle it across the chicken before I place it in a 375 degree oven. Not too much, just a little drizzling of the sauce, then I take my basting brush and smooth it all over the tops and sides of the chicken. Here are some really good organic sauces from Whole Foods!

The chicken will look like this once it’s baked.

While the chicken is cooking, take fresh green beans and after washing them, place them all on top of a baking sheet in one layer. Drizzle them with olive oil and salt/pepper.

They need to roast in the oven for 15 minutes on 400 degrees. (If you don’t have a 2nd oven, you can also pan roast them. Take a skillet with about 1/3 cup olive oil and after the oil gets to about medium high heat, place the beans in the skillet and with salt and pepper, start roasting them, flipping them over from time to time to get an even roasting on all the beans.

But one thing that really makes this delicious is taking the time to roast FRESH beans! If you have a local farmers market, nothing compares!! They have such a delicious farm-grown taste!!

There is one little bit of more roasting you need to do. Take small red potatoes and cut them in quarters. Wash them. Then place them all on another baking sheet that is lined with foil and drizzle them lightly with olive oil, salt, pepper, and a dash or two of garlic (a little bit of rosemary won’t hurt either) all over the potatoes and stir them up on the pan. Roast them in a 375 degree oven for 20 -25 minutes.

After roasting, I like to take my fork and just press down a little bit, just to soften up the potatoes.  Then I will add a little bit of organic sour cream and parsley. These are so delicious with BBQ chicken!!!

Take the baked chicken out of the oven and the potatoes and the beans and pile it up on a plate and enjoy!! This is such an easy and so delicious meal!!

And we sometimes we like to end it all up with a favorite homemade happy! We take some vanilla ice cream and top it off with warmed strawberry topping! Slice up your strawberries, and place them in a sauce pan with 1 TBSP of raw Stevia or raw sugar, 1/4 tsp of vanilla and cook them on low heat until all the sugar is dissolved and the strawberries are mushy…saucy. *the vanilla is optional, but the little added sugar helps make the topping a bit more sweet! So good!
