Red Pepper-Walnut Dip

3/4 cup walnuts, toasted
1/2 cup raisins
1/2 cup plain low-fat yogurt
1/4 teaspoon salt & pepper
1 (12-ounce) bottle roasted red bell peppers, drained

Place all ingredients in a food processor, and process until smooth.

Olive Pecan Mini Sandwiches

1 (8-ounce) package cream cheese, softened
1/2 cup chopped pimiento-stuffed green olives
1 cup chopped pecans, toasted
1 to 2 tablespoons mayonnaise
Thin pumpernickel bread slices
Garnish: toasted pecan halves

Stir together first 4 ingredients in a large bowl. Cover and chill until ready to serve. Cut crusts from bread slices; cut each slice into 4 squares. Serve spread on bread slices. Garnish, if desired.

White Chocolate Peppermint Mousse 

1 1/2 cups heavy whipping cream, divided
12 ounces white chocolate, chopped
1/4 teaspoon peppermint extract
Garnish: crushed peppermint candies

1. Heat 3/4 cup cream in a heavy saucepan over medium heat until hot but not boiling. Remove from heat, and add chocolate, stirring until melted. Stir in peppermint extract; cool completely.
2. Beat remaining 3/4 cup cream until firm peaks form. Fold chocolate mixture gently into whipped cream mixture. Spoon mousse into 8 (3-ounce) cups or glasses; garnish, if desired. Chill until ready to serve.

Savory Parmesan Bites

1 (8-ounce) package cream cheese, softened
1 cup grated Parmesan cheese, divided
1 small red bell pepper, chopped
1/4 cup fresh parsley, chopped
2 (8-ounce) cans refrigerated crescent dinner rolls

1. Stir together softened cream cheese, 3/4 cup cheese, bell pepper, and parsley.
2. Unroll crescent rolls, and separate each can into 4 rectangles, pressing perforations to seal. Spread 3 tablespoons cream cheese mixture on each rectangle. Roll up, starting at 1 short side, jelly-roll fashion. Cut each roll into 4 equal pieces, using a serrated knife. Place on ungreased baking sheets. Sprinkle bites with remaining ¼ cup cheese.
3. Bake at 350° for 13 to 15 minutes or until golden brown.
Note: To make ahead, place unbaked bites on ungreased baking sheets, and freeze 1 hour or until frozen. Place bites in zip-top plastic freezer bags; store in freezer up to 1 month. Place frozen bites on ungreased baking sheets. Bake at 350° for 15 to 17 minutes or until golden brown.
